VEGAN & GLUTEN FREE ENCHILADAS


Alison's Adventures is called the "female Indiana Jones". She travels the world and the oceans to fight environmental pollution and to raise awareness. This episode features: Cauliflower Enchiladas: Sauce 1 24 oz jar organic garlic pasta sauce 1 28 oz can enchilada sauce 3 teaspoons ground cumin 1 teaspoon salt 1 teaspoon pepper 1 teaspoon cayenne pepper Optional 1 tablespoon taco or fajita seasoning. We like Frontier brand. Filling ½ onion 2 small cloves garlic ½ head of cauliflower 2 carrots chopped ½ (7 oz) block organic tofu 1 small pumpkin or kabocha squash (approx. 2 cups) 2 tablespoons olive oil ¼ cup Kalamata olives, chopped Salt to taste 12 - 18 organic small corn tortillas Mix together sauce ingredients in saucepan. Cook 20 minutes to blend flavors. Set aside to cool. Cut pumpkin in quarters and steam pumpkin until soft, then scoop out center removing skin. Chop cauliflower fine with knife or food processor. Finely chop carrots; chop onion and kalamata olives; mince garlic. Sauté onion, garlic in olive oil for a few minutes, add salt to taste. Then, add carrot and cauliflower to the same pan, sautée for another 5 minutes on medium heat. Next crumble in tofu and chopped kalamata olives. Next, stir in cooked pumpkin. Stir to combine ingredients; this is your filling. Set up on counter: 9x11 pan, Enchilada filling mixture, Enchilada sauce- cool enough to use your hands to dip tortillas in the sauce. Pour a very thin layer of the sauce to cover bottom of pan.Dip tortillas one by one in the sauce and place in pan. Place 2 large tablespoons of filling into the tortilla, roll up and place in rows in pan. Pour the remaining sauce over the enchiladas. Place crumbled cauliflower (or grated cheese) as a top garnish. Bake at 350F for 30 minutes. Garnish with chopped green onion or cilantro and serve with guacamole and rice. Makes approx 12-16 enchiladas.
